GENERAL INFORMATION
Our classes are designed for beginners and experienced students alike. Our entry classes stress the core concepts and give a broad understanding of the business, while our Advanced and Master Classes expand on those core concepts and are designed for students looking to master specific skills and knowledge. But in all cases, our signature approach has been to provide students with both a solid classroom learning experience and hands-on instructor led training. It is our personal goal to make sure that no one leaves our classes disappointed or ill-equipped to succeed in their business.
Typical Class Structure
As a general rule, classes last seven hours and normally run from 9:30 a.m. to 4:30 p.m. Generally, classes consist of two parts: classroom theory and hands-on participation. Lunch is provided by PreGel AMERICA.
Consecutive-Day Classes
Please note that many of our Special Classes are offered on consecutive days. This means that rather than coming for only one day of training, we recommend you enroll in an Introductory or Advanced Class.
Prerequisites
Most of our classes do not have prerequisites. However, if you are new to gelato we highly recommend starting with an Introductory Class. Advanced Classes are applicable for those who have some experience making gelato and want to master their skills and become a true creator. Master Classes do require a few prerequisites which are outlined in the Become a Gelato Master tab.
Awarding of Certificates and Diplomas
A Certificate of Completion is to be awarded to each student completing an Introductory or Special Class. The certificate is given upon passing a test and obtaining a specific standard of knowledge. A diploma, an official document issued by PreGel AMERICA, will be awarded to those students who have successfully completed the Advanced Class and passed the exam. A Master's Award will be given to students who meet all the requirements of our Gelato Master program and pass a written exam.
Equipment
In our new, fully-equipped training facility we have a variety of the batch freezers, display cases, blast freezers and soft serve machines that will give you a great opportunity to choose from the latest technologies in the business.
Recipes
Recipes and instructions are provided for class use and are encouraged to be taken home.
Leftovers
In the case of leftovers after the class meal, they may be taken by students in plastic to-go containers.
Clothing
We suggest you dress in comfortable, casual clothing and flat, comfortable shoes. You may not wear open-toed shoes or sandals. PreGel AMERICA will provide aprons and gloves.
Hygiene
Make sure to wash and sanitize your hands every time before making any product in the kitchen.
Cellular Phone Policy
Cellular phones must be turned off or placed on silent at all times while class is in session. While we request that you do not talk on your phone during class, you may do so if necessary in the hallway, outside of the classroom or kitchen. Cellular phones are permissible during the scheduled break periods.

This rate will include transportation each morning only to PreGel AMERICA for the training classes and each afternoon back to the hotel. Times will be determined in advance for pick-up of guest. The banner will be placed on the transportation van for the PreGel AMERICA training classes with The Wingate by Wyndham and PreGel Professional Training Center logo. Only for those who stay in Wyndham Hotel, Cabarrus Cab Company is available to get from Charlotte Douglas Airport to Wyndham hotel. When hotel reservation is made, please contact Steve at 704-788-2586 to book a cab. He will need to know the date and time of your arrival and your airline. Please remember to mention that you are attending the PreGel AMERICA Training classes.
GENERAL POLICIES
Class Fees
All of the PreGel AMERICA classes are completely FREE of charge! It has been always a part of our legacy and commitment to our students. PreGel AMERICA also provides lunch during training classes.
Cancellation
In case you are unable to attend a scheduled class, please let us know as soon as possible (preferably one week ahead of time). PreGel AMERICA reserves the right to cancel our classes. In case of cancellation, all students will be notified a week ahead.
Photographs and Videos
Photography inside Training Center is allowed. Photographs of anything outside of the designated
Training Center are prohibited. Videos are prohibited to be taken inside of Training Center and in any other PreGel AMERICA facility area.
Allergens
If you have any allergic reactions to certain foods or ingredients please let us know before the start of the class.
Alcoholic Beverages
Alcoholic beverages may be used in certain classes for sorbet production. However, outside alcohol cannot be brought into the classes. School participants may be asked to present identification to prove that they are of legal North Carolina State drinking age and will be held responsible for limiting their consumption of alcohol to safe amount. Pregnant women, people who will be driving and people on certain medications should not consume alcohol.
Smoking
No smoking of tobacco products is permitted within the PreGel AMERICA facilities or on the property at any time.
